Calling this recipe mine feels a bit like stealing since it is originally my husband’s.

When we were getting to know each other, he made this incredible pasta with a tomato garlic butter sauce that just blew my socks off. I knew at that moment… that even if I didn’t marry him, I at least needed that recipe. Fortunately, I got both –  the recipe and a husband.

Although I enjoyed his recipe as is, I felt like something was missing to add an extra something…an oomph to the dish! I explored a few different additions to see what could be added – some worked out well, some not so much. My food tests finally came to where my recipe is today, it is the same as my husband’s, but with the addition of black olives and buffalo mozzarella.

Olives may seem a bit daunting at first, but give it a try! Black olives aren’t as bitter as other types of olives, and when cooked they have a mild, salty taste with a soft texture. The saltiness of the olives brings out the sweetness of the tomatoes in the sauce, creating a stronger umami flavor. This sauce has many layers of flavors, from the garlic to the tomatoes to the olives. By using some fresh mozzarella cheese at the end, it brings a gentleness to the dish to help the sauce not feel overwhelming. This recipe is meant to be quick and simple, so use what you have.

This recipe is not only full of flavor, but it is also *drum roll please toddler-friendly. I know. It sounds too good to be true. But my toddler LOVES this spaghetti recipe and it is so easy to make! If you are a parent like me, you know how hard it can be to make a meal while taking care of your children at the same time. With prep time, this meal takes only 35 minutes! The addition of black olives is great for cholesterol, the tomatoes provide a great source of vitamin C and potassium, and the buffalo mozzarella provides protein and vitamins. Knowing all the nutrients that are in this dish makes me feel more comfortable when I make it for my toddler. I know that I’m not only making a quick and easy meal, but a healthy one too.

Ingredients

  • 500 grams Spaghetti pasta
  • ¼ cup black olives no seeds
  • 1 pack fresh buffalo mozzarella
  • 4 tablespoons butter
  • 2 cups diced tomatoes
  • 1 tablespoon fresh garlic minced
  • 1 teaspoon sugar
  • 1 teaspoon italian seasoning
  • 2 small bay leaves
  • 1 teaspoon fish sauce or anchovies
  • salt & pepper to taste
  • parsley for garnishing optional

Instructions

  • Melt butter in a large skillet over medium high heat. Add garlic and cook until fragrant, stirring constantly about 30 seconds. Add olives, bay leaves, sugar, fish sauce, italian seasoning and tomatoes with juices.
  • Bring sauce to a gentle boils then reduce heat to low. Simmer sauce for about 20 to 30 minutes .
  • Meanwhile, begin heating water in a large pot. Cook pasta according to package instructions.
  • Add cooked and drained pasta to sauce and toss to combine. Arrange the pasta in a serving plate then top with fresh buffalo mozzarella cheese and fresh parsley.
