Austrian Beef Goulash (Österreichisches Rindsgulasch)

Ingredients

  • 500 grams beef cut in chunks
  • 2 ½ tablespoons sweet paprika
  • 1 tablespoon tomato paste
  • 2 cloves garlic minced
  • 3 pieces medium sized onion diced
  • 1 teaspoon caraway seeds
  • 2 pieces bay leaves
  • ¾ liter beef broth
  • ½ teaspoon vinegar
  • 4 tablespoons oil for frying
  • 2 tablespoons flour
  • salt & pepper to taste

Instructions

  • Season beef chunks with salt & pepper then dredge in flour
  • Fry beef in a medium sized sauce pan until golden brown. This step may take several times as we don't want to crowd our pan. Set aside browned beef.
  • In the same sauce pan, saute garlic and onion in medium heat until onions are transparent, add caraway seeds then saute for a few seconds. Add tomato paste and paprika then saute for few seconds more (do not saute very long as paprika tends to be bitter when cooked for too long).
  • Deglaze wih a splash of vinegar and add beef broth and bay leaves. Bring to a boil, reduce heat to low and let it simmer covered for 2-3 hours until beef are fork tender.
  • To finish, season with salt and pepper. Serve warm!
