Spaghetti in tomato garlic butter sauce

Spaghetti in rich tomato garlic butter sauce and olives topped with fresh buffalo mozzarella cheese. A quick and easy pasta recipe that the whole family can enjoy, even the kids!

Ingredients

  • 500 grams Spaghetti pasta
  • ¼ cup black olives no seeds
  • 1 pack fresh buffalo mozzarella
  • 4 tablespoons butter
  • 2 cups diced tomatoes
  • 1 tablespoon fresh garlic minced
  • 1 teaspoon sugar
  • 1 teaspoon italian seasoning
  • 2 small bay leaves
  • 1 teaspoon fish sauce or anchovies
  • salt & pepper to taste
  • parsley for garnishing optional

Instructions

  • Melt butter in a large skillet over medium high heat. Add garlic and cook until fragrant, stirring constantly about 30 seconds. Add olives, bay leaves, sugar, fish sauce, italian seasoning and tomatoes with juices.
  • Bring sauce to a gentle boils then reduce heat to low. Simmer sauce for about 20 to 30 minutes .
  • Meanwhile, begin heating water in a large pot. Cook pasta according to package instructions.
  • Add cooked and drained pasta to sauce and toss to combine. Arrange the pasta in a serving plate then top with fresh buffalo mozzarella cheese and fresh parsley.
