Ingredients
500gramsSpaghetti pasta
¼cupblack olives no seeds
1packfresh buffalo mozzarella
4tablespoonsbutter
2cupsdiced tomatoes
1tablespoonfresh garlicminced
1teaspoonsugar
1teaspoonitalian seasoning
2smallbay leaves
1teaspoonfish sauce or anchovies
salt & pepper to taste
parsley for garnishingoptional
Instructions
Melt butter in a large skillet over medium high heat. Add garlic and cook until fragrant, stirring constantly about 30 seconds. Add olives, bay leaves, sugar, fish sauce, italian seasoning and tomatoes with juices.
Bring sauce to a gentle boils then reduce heat to low. Simmer sauce for about 20 to 30 minutes .
Meanwhile, begin heating water in a large pot. Cook pasta according to package instructions.
Add cooked and drained pasta to sauce and toss to combine. Arrange the pasta in a serving plate then top with fresh buffalo mozzarella cheese and fresh parsley.
